Recipes

Several readers have asked for the recipes of special foods mentioned in Chapter 10 in From Borsch to Burgers.  I’ll be adding to this list as more requests come in.

Horishky (walnut cookies)

Kutia, an ancient Christmas dish (American name: wheat berry pudding)

Medyanyk, the cake my mom made for my birthday (American name: honey cake)

Horishky cookies, special cookies filled with dulce de leche (American name: walnut cookies)

Compot (summer drink with seasonal fruit)

Ingredients: a handful of each: raspberries, blueberries, blackberries, 3-4 ripe plums (cut up in big chunks).

Instructions: Pour water into a large pot, add the berries and cut up plums.  Bring to a boil, add 1/4 cup honey.  Let it boil for 3-5 minutes.  Turn it off and let it cool on the stove for at least an hour.  Pour into a jar and cool off in the fridge.
